CHICAGO - Margeaux Brasserie, from James Beard award-winning Chef Michael Mina, has opened its doors in Chicago's historic Gold Coast neighborhood. Located on the third floor of the Waldorf Astoria Chicago at 11 East Walton Place, the restaurant is meant to evoke the feeling of dining at a Parisian café. The menu features elevated French cuisine made with locally sourced ingredients, alongside a robust French wine and cocktail list. Margeaux Brasserie joins Petit Margeaux, a classic French patisserie on the hotel's lobby level, which opened on June 22, 2017.

"We have wanted to be part of Chicago's stellar restaurant scene for quite some time and are excited to join this community in the most iconic of neighborhoods with the opening of Margeaux Brasserie and Petit Margeaux at the Waldorf Astoria Chicago." 

Executive Chef Brent Balika, formerly of The Dawson, is at the helm of the kitchens of Margeaux Brasserie and Petit Margeaux and Chef Ashley Torto leads the pastry team. Mina and Balika collaborated to create a menu that focuses on product and technique, while showcasing regional, Midwestern ingredients. Mina has long favored French cuisine for its bold, craveable flavors and exquisite technique along with its capacity to let exceptional ingredients shine. A roaming "Chariot du Fromage" will delight guests with selections of the best cheeses from France. Additionally, the menu will feature a robust selection of raw seafood, alongside time-honored French staples, such as:

  • Heritage Chicken Roti: Maitake Mushroom, Braised Bacon, Sauce a la chasseur
  • Les Steak Frites: Filet, Rib Eye, NY Strip, or Bavette, served with Pommes Frites and Béarnaise (with the option to add Steak "Foie Poivre" with green peppercorn, shallot confit, fourme d'ambert to any cut)
  • Escargot A La Bordelaise: Parsley, Garlic, Porcini Mushrooms, Puff Pastry Crumble
  • Dover Sole A La Meuniere: White Asparagus, Brown Butter, Lemon Confit
  • Tomato Tatin: Caramelized Onion, Marinated Buratta
  • Foie Gras Parfait:  Preserved Cherry, Warm Brioche, Grilled Knob Onion

The Margeaux Brasserie wine list, created by Beverage Director Daniel Grajewski, has a strong focus on France and will include rare gems like Domaine du Comte de Vogue Musigny from the early 1990s and 1996 Krug Clos d'Ambonnay.  There is a beautiful Champagne cart available for tableside pours of unique bubbles from Margeaux's wine cellar, such as Egly-Ouriet, Jacques Selosse, or even Dom Perignon. While the list will have a Parisian flare, it will offer wines from all over the world.

The restaurant offers three distinct dining areas - the heart of which is a captivating marble-topped bar with brass shelving perched high above the bar under a ceiling of tarnished gold. Extending from the bar, the lounge features a plush art-deco black and gold carpet, large lounge chairs upholstered in a diamond pattern and rich, hunter green leather booths. The side dining area features silver and gold drapes over windows that look out on the Gold Coast street below, with a series of four top tables scattered over an expansive oak plank floor.
